Melbourne Flavours began as a twelve-table bistro on the river and grew into the city’s most discreet casino-restaurant — still family-owned, still obsessed with the same two crafts.
Four decades, one unbroken streak

The bistro opens
Twelve tables, a charcoal grill and a single blackjack felt in the back room for friends of the house.
The licence arrives
A full gaming licence turns the back room into three private salons — and the kitchen doubles in size.
The cellar dig
Renovation uncovers a bluestone cellar beneath the floor; it now holds the reserve collection.
Fourteen salons
The south wing completes the house: fourteen private rooms, a garden courtyard and the midnight oyster rail.
The house has a scent
Guests ask about it so often that we finally bottled it. “Whiteman №1” is the room’s own composition — built nightly by candle smoke, cedar and citrus peel.

Each season the house hosts a black-tie gala where every chip on the felt flows to our partner foundations. The room plays for keeps — and for good.
The Silver Table Ball
A seated dinner, a friendly tournament with buy-ins donated in full, and an auction of cellar rarities. Last year’s table raised $61,000 in one evening.
A cellar older than the house
Beneath the dining room, behind a door marked only with a brass card suit, sleeps the founder’s private collection of cognac and armagnac — some distilled before the building itself existed.

Continuous oversight by a pit manager plus independent chip-count audits each shift.

Escorted exits and chauffeured cars arranged through the concierge, day or night.
Guests arriving in convoy or requiring enhanced arrangements should contact the duty manager 48 hours ahead — a dedicated arrivals plan is drawn for each visit.

The dress code, decoded
